Knickerbocker

It is raspberry season and hot outside?

Then forget all modern-style fancy blended disco cocktails with flavorized spirits!  More than 150 years ago Jerry Thomas had the right drink for us, the Knickerbocker!, (Jerry Thomas´Bartenders Guide of 1862).

1/2 a lime, or lemon, squeeze out the juice, and put rind and juice in the glass. 2 teaspoonfuls of raspberry syrup, 1 wine-glass Santa Cruz rum (I took Mount Gay rum), 1/2 teaspoon of Curaçoa.

Cool with shaved ice; shake up well, and ornament with berries in season. If this is not sweet enough, put in a little bit more raspberry syrup.

I added fresh raspberries, a mint sprig and a good splash of Creole Bitters.

Enjoy!
