Julie Reiner created the Cuzco in 2007 when she returned from a tour of Pisco distillieries in Peru, Jim Meehan writes in his PDT Cocktail Book.
2 oz. Pisco, 0.75 oz. Aperol, 0.75 oz. Simple Syrup, 0.5 oz. Lemon juice, 0.5 oz. Grapefruit Juice, Kirschwasser (for rinsing), garnish: Grapefruit Twist
Shake ingredients with ice and strain into a Kirschwasser-rinsed Collins glass filled with ice. Garnish with a grapefruit twist.
