Missionary´s Downfall

Too much fresh pineapple and mint left? Then you MUST try the Missionary´s Downfall. The recipe is from the family of Hank Riddle, who worked at several Don the Beachcomber´s restaurants from the 1940s to the 1980s, according to Jeff Berry in Beachbum Berry Remixed. This drink is so sweet and exotic, refreshing and energizing, you won´t regret it!


1/2 oz. Lime Juice, 1/2 oz. Peach Brandy, 1 oz. Honey Mix (half honey and half hot water stirred together), 1 oz. Light Rum, 2 oz. (1/4 cup) Diced Fresh Pineapple, 2 oz. (1/4 cup) Fresh Mint Leaves, tightly packed, 6 oz. (3/4 cup) Crushed Ice, garnish: Mint Sprig


Put everything in a blender and blend at high speed for 20 seconds. Pour in a cocktail glass and garnish with the mint sprig.
