The Valencia is also known as the Spanish martini. It was the favorite drink of Joe Drown, the owner of the hotel Bel Air in Los Angeles. Dale Degroff added the flame orange peel to this drink.


1/2 ounce Fino Sherry, preferably Tio Pepe, 2 and 1/2 ounces Gin, Garnish: Flamed Orange Peel


Stir sherry and gin with ice in a mixing glass and strain into an ice-cold cocktail glass. Garnish with the orange peel.
