Rabo de Gallo

The Rabo de Gallo is a wonderful drink from John Coltharp, Los Angeles. The melange of strong Cachaca, sweet Carpano Antica and herbal Cynar is awesome. You have to try it!

Ingredients

2 oz. Cachaca

1/2 oz. Carpano Antica

1/2 oz. Cynar

Orange Peel

Preparation

Stir ingredients with ice and strain into a chilled glass. Twist and orange peel over the drink and use as a garnish.

    Rabo de Galo is a really nice cocktail, I don’t recognize you bottling of Nega Fulo, but I assume it is aged, just like the Nega Fulo we have in here.
    This is a local classic that the brazilian bartenders are rediscovering, if you can go with a good aged cachaca, I don’t know which brands you have available there, but the mix of Cachaca and Cynar is a very good one.
    This recipe you are giving is a mix between the two versions we have here, since its a build 50/50 of cachaca and cynar or sweet vermouth, like a rusty nail…
    But we are starting to market this cocktail as our version of the Manhattan and thus presenting it up.

      In normal German shops the supply of cachaca is very limited unfortunately, but in more specialized licor shops you can find a better selection. Indeed I am not sure if my Nega Fulo is aged (I hope so), but I will check it out the next time I am going “bottle shopping”!
